Ingredients

  • 150 g flour
  • 2 tsp baking powder
  • 100 g sugar
  • 2 eggs
  • 125 g butter
  • 1 lemon
  • 300 g Filona cream cheese
  • 100 g icing sugar

How it’s done

Step 1:
In a bowl, mix the flour with the baking powder. Set aside.

Step 2:
In another bowl, beat the eggs with the sugar until the mixture turns white.
Add the butter cut into pieces and beat until creamy. Add the lemon zest and then gradually add the flour mixture. Stir until a dough forms.

Step 3:
Pour the mixture into the cupcake tin lined with a well. Bake in a preheated oven at 180 °C for 20 minutes. Remove the cupcakes from the oven and leave to cool on a wire rack.

Step 4:
Mix the Filona cream cheese with the icing sugar and 2 tablespoons of lemon juice to form a creamy mixture. Fill into a piping bag and pipe onto the cupcakes in a spiral shape. Alternatively, apply the mixture with a spatula. Garnish with a lemon wedge at the end.
