Vegan gnocchi gratin

Ingredients

Gnocchi Ingredients:

  • 1kg potatoes
  • 50g cornstarch / potato flour
  • 1 tsp salt
  • 1 tsp pepper
  • pinch of nutmeg
  • 300g wheat flour

Tomato sauce Ingredients:

  • 1 can of tomatoes
  • 120g MascarVone
  • 50g grated parmesan (vegan)
  • 1 MozzaVella (sliced)
  • Salt & pepper

How it’s done

For the gnocchi, boil the potatoes until soft, about 30 minutes. Then put them through a potato ricer. If you don't have one, you will have to peel the potatoes and then mash them. Then add the other ingredients and knead into a mass. Now portion the dough and roll it into 2 cm thick sausages. From this cut gnocchi 2-3 cm long. Put the gnocchi in a lightly boiling pot of water. As soon as they rise to the top, they are ready. For the tomato sauce, put all the ingredients in a bowl and mix well. Preheat oven to 200 °C. Put the gnocchi in a baking dish, pour the sauce over them followed by the MozzaVella slices. Bake for 15min.
