How it’s done

Pasta with only six ingredients: that’s right – for this pasta with cottage cheese and walnut pesto recipe, you only need six ingredients! Just combine cottage cheese, basil, parmesan, walnuts, olive oil, and the pasta of your choice. You can add a bit of garlic in if you like – and that’s all there is to it! At the end, add salt and pepper to taste and in just 15 minutes, you’ll be tucking into your dinner.

Method:
Cook spaghetti as normal in salted water. While it’s cooking, add the cottage cheese, basil, parmesan, walnuts, garlic and olive oil to a multichopper. Add a small ladle of pasta water, and coarsely purée the mixture. Add more pasta water if required. Drain the pasta, mix together with the pesto and serve.
