This pasta with green asparagus in a fresh lemon sauce is a real treat for the senses. The slightly sweet taste of the asparagus goes perfectly with the tart note of the lemon sauce and makes a delicious dish for any occasion.

Ingredients

  • 400g large noodles
  • 500g green asparagus
  • 4 tablespoons soft butter
  • 200g organic mascarpone
  • 1 untreated lemon, grated peel and juice
  • 1-2 tablespoons finely chopped flat-leaf parsley
  • ground pepper
  • Sbrinz shavings

How it’s done

Cut off end of asparagus and peel lower third, cut spears into 3 to 4 pieces. Cook pasta in plenty of salted water until al dente, add asparagus and cook for 2 to 4 minutes, drain in a colander (save cooking water for soup). Mix butter, mascarpone, lemon juice, lemon zest and parsley. Add pasta-asparagus mix to pot and mix with sauce, heat through. Dressing. Garnish with coarsely ground pepper and Sbrinz shavings.
