How it’s done

See how sweet cottage cheese can be

For a 26 cm spring-form tin

Preheat the oven to 200°C (upper and lower heat).

Combine the softened butter, sugar, vanilla sugar and salt in a bowl and cream with a hand mixer. Add the eggs one at a time while mixing, then add the lemon zest. Combine the baking powder with the flour and slowly fold the dry mixture into the wet mixture. Add the cottage cheese and combine to form a smooth batter.

In the last step, carefully fold half of the berries into the batter. Grease the spring-form tin with butter. Pour the batter into the tin and top with the remaining berries. Bake the cake in the preheated oven for approximately 40 minutes. Test the cake for doneness with a wooden skewer or toothpick after 30 minutes. Insert the skewer or toothpick into the centre of the cake. Once the skewer comes out clean, the cake is done.
