Ingredients

  • 250g cherry tomatoes⁣⁣
  • 1 garlic clove, minced ⁣⁣
  • 1 tsp salt⁣⁣
  • Black pepper to taste ⁣⁣
  • Olive oil ⁣⁣
  • 6 slices of olive ciabatta ⁣⁣
  • 1 vegan MozzaVella
  • Fresh basil⁣⁣

How it’s done

Preheat oven to 200°C.⁣⁣ Add the cherry tomatoes, a generous drizzle of olive oil, minced garlic, salt and black pepper into a baking dish. Mix until the tomatoes are well coated. Bake for 20 mins. ⁣⁣Add the bread slices onto a baking tray and drizzle with olive oil on both sides. Bake for 5 mins. ⁣⁣Then add mozzarella slices on each piece of bread and bake again for about 10 mins or until the cheese is melted. ⁣⁣Finally add the roasted cherry tomatoes on top of the melted cheese and serve with fresh basil on top!⁣⁣
